Nothing beats a lemon pie!

Ingredients
1 1/2 cups matzo meal
1/8 tsp salt
ΒΌ cup oil (Walnut or other Passover safe oil)
1/3 cup melted margarine (or butter for dairy)
3 eggs (lightly beaten)
1 cup plus 2 tbs. sugar
1/3 cup lemon juice
1 tbs. lemon zest
3 egg whites
Directions
- Mix matzo meal, salt, sugar and oil.
- To make the crust, press mixture into greased 9" pie tin. Bake at 350 degrees (F) for 20 minutes then set aside to cool.
- Combine whole eggs, all but 1/4 cup sugar, butter, and lemon juice and zest in top of double boiler. Place over hot water and cook over low heat, stirring constantly, until mixture is thick.
- Pour cooled filling into pie shell, spreading evenly.
- Beat egg whites until stiff and fold in remaining 1/4 cup sugar thoroughly. Use to cover lemon filling.
- Bake at 375 degrees (F) for 10 minutes until lightly brown.
