These golden colored Passover cookies go great with added chocolate chips to the batter or dipped in chocolate.

Ingredients
1 1/3 cup flaked coconut
1/3 cup sugar
2 tbsp. potato starch
1/8 tsp. salt
2 egg whites
1/2 tsp. almond extract
Directions
- Blend all ingredients together well.
- Arrange teaspoon sized portions on a greased and potato starched cookie sheet. Bake at 325 degrees (F) about 20 minutes or until edges turn golden.
- Remove from cookie sheet immediately and set aside to cool.
