Spinach and Cheese Souffle

This is my mother's recipe for spinach and cheese souffle, though I don't know where she got it from. Make sure that you squeeze dry the spinach after it thaws.

Ingredients

6 eggs, beaten
1/2 stick margarine, melted
1 large (16 oz.) container cottage cheese, small curd
2 pkg. frozen chopped spinach, thawed
8 oz. shredded cheddar cheese
6 tbsp. flour

Directions

  1. Combine all ingredients and spread evenly in an oiled or buttered 13x9 inch baking dish.
  2. Bake for 90 minutes at 350 F (use lower temp, 325F if using glass baking dish).
  3. Remove from oven and set aside to cool for 5 minutes.
  4. Cut into squares and enjoy!
