Spinach and cheese fritada recipe for Passover. Works well as a side for dairy meal, or even as an entree for lunch, brunch, or breakfast!

Ingredients

1 package (10. oz.) chopped spinach, frozen, thawed
1 package cream cheese
1 small tub of cottage cheese
1/2 cup matza meal
3 eggs, lightly beaten
Salt and pepper, to taste

Directions

  1. Prepare a baking dish (1 quart) by spraying with with cooking spray.
  2. In a glass bowl, melt cream cheese in microwave.
  3. Squeeze out as much of the water from the cut spinach.
  4. Mix with cream cheese, cottage cheese, matza meal, eggs, salt and pepper.
  5. Pour into casserole and bake 40 minutes at 350 F.
  6. Fritada is done when browned on top.
