Zucchini Fritada

Ingredients

1-1/2 pounds zucchini, peeled and grated
1 medium onion, chopped
3 tbl vegetable oil
5 squares of matzah
1 cup cottage cheese
1 tsp. salt
5 eggs
1 cup sour cream
5 oz. grated cheddar cheese

Directions

  1. Saute the onion in oil for 5 minutes. Drain excess water from zucchini and add to onions and continue sauteing for 5-7 minutes.
  2. Meanwhile, break up the matzah squares and soak in warm water for 5 minutes. Squeeze out excess water.
  3. Mix the zucchini, onion and matzah with the remaining ingredients.
  4. Prepare a 13x9 inch baking pan with non-stick cooking spray (kosher for Passover) and pour in the mixture, spreading evenly.
  5. Bake at 350F for 50 minutes or until golden brown.
