A simple vegetarian sandwich. Great for a warm summer day. The preparation time does not include time for making your own hummus or tabbouleh.

Ingredients
1 pita, cut in half
1/4 cup hummus
1/3 cup tabbouleh
2 tbl Feta cheese, crumbled
1 leaf romaine lettuce, cut or shredded
1/4 tbl tomato, chopped
1/4 cup alfalfa sprouts
1 tbl Greek olives, sliced
Lemon Dill dressing (or your favorite)
Directions
- Open pocket and spread one side with hummus
- Spoon in tabbouleh and remaining ingredients Drizzle salad dressing.
- As a variation, use Greek dressing or olive oil and lemon juice in place of Lemon Dill dressing
