Zucchini Pancakes

This is a great and easy recipe, you can also substitute the Zucchini with Leeks, Potatoes or even a mix of all. Yields about 12 pancakes.

Ingredients
2 medium zucchini ( about a 3/4 pounds )
2 tablespoons of red onion ( grated )
2 large eggs, slightly beaten
6 to 8 tablespoons of flour ( you may need more or less depending on how juicy the veggies are ) All purpose flour is fine
1 teaspoon of kosher salt
1 teaspoon of baking POWDER
1/2 teaspoon of freshly ground pepper
unsalted butter and vegetable or EV olive oil
Directions
- Grate the zucchini in a large bowl using the large side of a box grater. Stir in the eggs, onions, 6 tablespoons of flour, baking powder, salt, and pepper. If the batter is too thin, add tablespoons of flour as needed to tighten up the batter.
- Heat a large ( 10 or 12 inch ) skillet over medium heat. Add a pat of butter and 2 to 3 tablespoons of oil. When the butter is hot and not smoking, lower the heat to about medium. Make sure to wipe out the pan each time you make a batch and start with fresh butter and oil. Spoon in the mixed zucchini, about a heaping tablespoon per pancake. When golden brown ( about 4 minutes per side ) flip and cook the other side. Serve hot.
- Note: You can add herbs that you like. I add feta cheese to mine.
