Passover Matzo Rolls

Serve these rolls as is or add your favorite filling to make a nice appetizer.

Ingredients
1/2 cup vegetable oil
1 tbl sugar
1 tsp salt
1 cup water
2 cups matzo meal
4 eggs
Directions
- In a sauce pan, bring water to a boil.
- Add the oil, sugar, and salt to the water and return to a boil.
- Remove from the heat and add the matzo meal all at once.
- Stir vigorously then place over low heat, stirring continuously until the batter forms a compact ball.
- Remove from the heat and beat in the eggs, 1 at a time, beating vigorously after each egg. Batter should be thick and smooth.
- Shape the batter into 8 to 10 balls and place them about 2 inches apart on a well-greased baking sheet.
- Bake at 375F for 1 hour, until golden brown.
- Cool on paper towels on a wire rack.
