Ingredients
4 squares matzoh
7 large eggs, separated
1 1/2 cups sugar
Juice of half lemon
1/2 teaspoon lemon zest
1/3 cup margarine
1 1/2 teaspoons cinnamon
4 large Granny Smith apples, peeled and grated
1/2 cup seedless raisins
1/2 teaspoon salt, adjust to taste
Directions
- Cover matzoh in water until soaked, then drain and press out excess water.
- Beat egg yolks with sugar until light and fluffy. Add matzoh, lemon juice, margarine, cinnamon and 1/4 teaspoon salt and continue beating until combined.
- Add grated apples and raisins to yolk mixture. Beat egg whites and 1/4 tsp. salt, until frothy, at low speed. Increase speed to high and continue beating until soft peaks appear. Fold egg whites into the yolk mixture.
- Pour mixture into a 9 x 13 inch baking dish (greased). Bake at 375 degrees (F) until lightly browned on top.
