Potato and Apple Pancakes

Simple Passover recipe is quick and tasty. Serve as a side dish or appetizer along with sour cream or even apple sauce.

Ingredients

1 package (3 oz.) potato pancake mix
1 egg
1/2 cup applesauce
1/2 cup cold water
1 tbl. melted butter

Directions

  1. In a small mixing bowl, combine the pancake mix with the egg, applesauce, and cold water. Mix well.
  2. Let the batter stand for 10 minutes.
  3. Heat a heavy skillet over medium heat and brush with melted butter.
  4. Drop one tablespoon of batter into heated skillet for each pancake, pressing with a spatula to flatten.
  5. Cook each side about 2 minutes, until golden brown.
