I like using garbanzo beans in this vegetarian grape leaves recipe (not to mention the mint!). I find that the rice alone doesn't stand up to the flavor of the grape leaves. The garbanzos add nice texture as well.

Ingredients
1 cup canned garbanzo beans, drained and rinsed
1 cup olive oil
2 cups uncooked rice
2 bunches parsley, stems removed and chopped
1 bunch mint, chopped
1 large yellow onion, chopped finely
1 bunch green onion, chopped
1 jar grape leaves
1 large can (28 oz.) chopped tomatoes
salt and pepper to taste
2 cups water
1 tbl. lemon juice
Directions
- Mix together garbanzo beans, olive oil, rice, parsley, mint and onions.
 - Rinse grape leaves to remove excess salt and roll out, rib side up. Fill each with 1 tablespoon of mixture and roll towards the stem end, folding in edges before final roll.
 - Arrange grape leaves in a large sauce pan. Cover with tomatoes and add salt and pepper, to taste. Add water. Simmer, covered, over low heat for 1 hour.
 - To serve, sprinkle with lemon juice and serve hot.
