I like using garbanzo beans in this vegetarian grape leaves recipe (not to mention the mint!). I find that the rice alone doesn't stand up to the flavor of the grape leaves. The garbanzos add nice texture as well.

Ingredients

1 cup canned garbanzo beans, drained and rinsed
1 cup olive oil
2 cups uncooked rice
2 bunches parsley, stems removed and chopped
1 bunch mint, chopped
1 large yellow onion, chopped finely
1 bunch green onion, chopped
1 jar grape leaves
1 large can (28 oz.) chopped tomatoes
salt and pepper to taste
2 cups water
1 tbl. lemon juice

Directions

  1. Mix together garbanzo beans, olive oil, rice, parsley, mint and onions.
  2. Rinse grape leaves to remove excess salt and roll out, rib side up. Fill each with 1 tablespoon of mixture and roll towards the stem end, folding in edges before final roll.
  3. Arrange grape leaves in a large sauce pan. Cover with tomatoes and add salt and pepper, to taste. Add water. Simmer, covered, over low heat for 1 hour.
  4. To serve, sprinkle with lemon juice and serve hot.
