Roasted Salmon with Onions

This is a great way to prepare salmon -- it's got a great and familiar flavor if you're used to Middle Eastern and North African cooking. This dish goes well served on a bed of lentils -- I suggest "Lentils with Swiss Chard".

Ingredients

2 lbs salmon fillet
1 large onion, sliced
3 garlic cloves, sliced
1 tsp. paprika
1 tsp. turmeric
1/2 tsp. cumin
salt and pepper, to taste
Optional: 1/4 tsp. cayenne pepper

Directions

  1. Place onions and garlic in a roasting pan (sprayed with non-stick spray). Season with salt and pepper and roast mixture for 5-8 minutes at 400 degrees (F)
  2. While onion mixture is roasting, mix salt, pepper, paprika, turmeric, cumin and cayenne pepper (if using) and rub on salmon
  3. Place the salmon fillets on the onion and continue baking (drizzle olive oil for added flavor) for 10 minutes
  4. Broil for two minutes to brown the top and serve
