Ingredients

For the Batter:
1/2 cup margarine
1/4 cup sugar
2 eggs (beat one at a time)
3/4 cup milk
1 1/4 cup flour
1 tsp baking powder
1/2 tsp salt

For the Filling:
12 oz cottage cheese
8 oz. cream cheese
1 egg
2 tbs minute rice (optional)
1/4 cup sugar (adjust to taste)
Salt to taste

Directions

  1. Mix the batter ingredients until well blended, adding eggs one at a time.
  2. Pour half of the batter into a greased square pan and set aside the remaining batter.
  3. Mix filling ingredients together then spread evenly over batter.
  4. Cover with the remaining batter and bake at 350 degrees (F) for 35 minutes.
  5. Cut into squares and serve with your favorite fruit topping.
