Halvah is a wonderful treat that is unlike most desserts.

Ingredients

1 3/4 cup sesame paste (tahini)
2 cups sugar
1 cup water
1 tbs. pure vanilla
2 egg whites
1 cup shelled pistachios, unsalted

Directions

  1. Combine sugar and water in saucepan and bring to a boil. Syrup is done when a few drops in a small basin of cold water forms a firm ball that will not flatten on removal (occurs at 234 degrees (F)). Set aside.
  2. Place sesame paste (with oil) and vanilla in blender and mix thoroughly.
  3. Beat egg whites until stiff and fold into sesame paste.
  4. Gradually add 3/4 cup of the syrup, stirring constantly
  5. When completely blended fold in nuts and remaining syrup.
  6. Transfer mixture to a loaf pan.
  7. Smooth over top, cover tightly and refrigerate for 3 days.
