Another great latke recipe!

Ingredients
6 potatoes (Idaho or Russet), peeled and grated
2 large yellow onions, grated
2 eggs, beaten
5-6 tbs. matzoh meal or flour
salt and pepper
1/4 cup green onions, minced
Vegetable oil for frying
Directions
- Squeeze out extra water from grated potatoes.
- Add eggs, matzoh meal, green onions and mix well.
- Heat one inch of oil in a skillet over medium heat.
- Put in a large spoonful of batter and flatten out . Fry until golden brown, turning once.
- Place on paper towels to soak up excess oil.
- You can keep latkes warm in oven at 250 degrees (F).
