Sukkot is a harvest holiday and is a great time to enjoy vegetable dishes. This wonderful stew is easily modified to include your favorite vegetables and spices.

Ingredients
1.5 lb. eggplant, cubed
2 large yellow onions, sliced
1 clove garlic, minced
3 medium carrots, sliced
1 lb. fresh green beans
4 small zucchini, cut into chunks
1 lb. okra, trimmed
6 tomatoes, chopped and seeded
2 medium green bell peppers, seeded and sliced
2 medium red bell peppers, seeded and sliced
5 tbl olive oil
1/2 cup water
Salt and pepper to taste
Pinch of sugar
Directions
- Heat 3 tbl. of oil in a large skillet over medium heat. Add onions, garlic, and carrots and saute about 5 to 10 minutes until just soft.
- Add the eggplant and continue sauteing about 5 minutes.
- Add the remaining vegetables, water, salt, pepper, and sugar.
- Transfer the stew to a casserole dish and drizzle with the remaining olive oil.
- Cover and bake at 350 degrees (F), about 1 1/2 hours.

Is it bad to lift weights with my neck, let me ask you? It is wrong to not stercth before running a relay Heck yeah, that's bad you crazy (? No offense) If your neck is bad, you're probably doing something wrong.
