Zucchini Potato Latkes

This Romanian influenced recipe adds some variety to the traditional latke recipe.

Ingredients

2 lbs. zucchini
2 large potatoes
1 medium onion
3 eggs
1 tsp. vegetable oil
3/4 cup matza meal
salt and pepper
vegetable oil for frying

Directions

  1. Peel and grate zucchini (discard seeds).
  2. Peel and grate potatoes and add to the zucchini.
  3. Make sure that you remove any water from both the zucchini and the potatoes, otherwise they will not brown well.
  4. Grate the onion and add to the zucchini mixture.
  5. Add eggs, oil and 1/2 cup matza meal and mix. You may need to add more matza meal until the mixture holds together.
  6. Add salt and pepper to taste.
  7. Spoon mixture into a large skillet and fry in vegetable oil until browned on both sides.
  8. Place latkes on paper towel to drain excess oil and keep warm in oven until ready to serve.
  9. Total cook time depends on how many latkes you fry at one time.
