Ingredients
Crust:
2 sticks margarine
2 c. flour
1/2 c. powdered sugar
Filling:
1 c. shredded coconut
4 T. lemon juice
grated rind of lemon
4 eggs
4 T. flour
2 c. sugar
1/2 t. baking powder
Directions
- Crust: Mix all 3 ingredients together. Place in two 7 X 11 pans. Bake 15 minutes at 350.
- Filling: Mix all ingredients together, pour over baked crusts and continue baking 25 minutes at 350. Sprinkle with confectionery sugar.
