My Best Vegetable Kugel

Our family has had this recipe for a long time, a favorite from a forgotten cookbook; For Passover or any time of the year! I also bake this in individual muffin tins and this always gets recipe requests!

Ingredients
12 Tbs butter or margarine
1/2 cup green bell pepper chopped
2 cups onions chopped
1 cup diced celery
3 cups grated carrots
20 oz raw spinach, washed drained, tough stems removed
6 large beaten eggs
3 tsp salt
1/4 tsp pepper
1 1/2 cup matzoh meal
Directions
- In a very large pot or skillet, saute all vegetables in margarine or butter, stirring now and then until vegetables become tender.
- Fold in beaten eggs, salt, pepper, matzoh meal.
- Spoon into a well greased 9 x 13 pan.
- Bake in a 350F oven about 45 minutes or firm.
- Cool 10 minutes in pan and cut into squares to serve
- Optional: add some chopped garlic
