Beef Stew with Lima Beans

This stew is an entire meal and makes a great cholent recipe for Shabbat.

Ingredients

1 cup lima beans, cooked
3 lbs. beef, cubed for stew
1 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1/2 tsp. ginger
2 tbl. olive oil
2 large onions, chopped
2 cloves garlic, chopped
6 cups chicken stock
2 large baking potatoes, cubed
1 cup pearl barley

Directions

  1. Combine beef, salt, pepper, paprika and ginger. Saute beef in oil until browned on all sides (8-10 minutes).
  2. Add onions and garlic and saute for an additional 5 minutes.
  3. Add all remaining ingredients and simmer for 30 minutes.
