Tasty meal is sure to please almost everyone.

Ingredients
2 tbs vegetable oil
40 oz. boneless chicken breasts, cut in half
1/2 cup flour
1/2 lb. mushrooms, cut into pieces
6 oz. marinated artichoke hearts
2 cloves garlic, minced
1/2 tsp. oregano
fresh ground black pepper
2 cups chopped tomatoes
1/2 cup kosher cooking sherry
Directions
- In a large skillet, heat vegetable oil. Dredge chicken in flour then brown on all sides. Remove to a baking dish.
- Add mushrooms, artichoke hearts, garlic, oregano, pepper and chopped tomatoes over chicken.
- Bake, covered, at 350 degrees for 1 hour, or until tender. Pour sherry over chicken and bake an additional 10 minutes.
- Serve over rice.
