Ingredients

4 1/2 cups flour
2 packages active dry yeast
1 1/2 cups warm water (about 110 to 115 F)
3 tbl. sugar
1 tbl. salt
1 tbl. sugar

Directions

  1. Combine 1 1/2 cups flour and the yeast. Combine warm water, 3 tbl. sugar and the salt and pour over the flour mixture.
  2. Beat at low speed for half minute, scraping sides of bowl constantly.
  3. Beat for 3 minutes on high speed.
  4. Stir in the remaining flour and mix in with a spoon.
  5. On a lightly floured surface knead in enough remaining flour to make moderately stiff dough.
  6. Continue kneading until smooth and elastic, 6 to 8 minutes.
  7. Cover and leave about 10 to 15 minutes.
  8. Cut into 12 portions and shape into smooth balls.
  9. Punch a hole in the center of each with a floured finger. Gently enlarge the hole to 1 1/2 inches.
  10. Place on a greased baking sheet. Cover; let rise 20 minutes.
  11. Broil 5 inches from heat for 1 1/2 - 2 minutes on each side. Tops should not brown.
  12. Heat 1 gallon water and 1 tbl. sugar to boiling; reduce heat.
  13. Cook bagels, 4 at a time, for 7 minutes, turning once.
  14. Place on greased baking sheet and bake in 375 degree (F) oven for 25 to 30 minutes.
