Chicken With Macaroni

This is a wonderful recipe that everyone will enjoy. The recipe is not complicated but the long cook time means this isn’t a last minute dish.

Ingredients

1 whole cut-up chicken (about 3 lbs)
16 oz. elbow macaroni
1 tbl. vegetable oil
1 cup tomato sauce
1/2 cup chicken broth
1/2 tsp. allspice
1/2 tsp cumin
1 tsp. paprika
1/2 tsp. garlic powder
Salt and pepper to taste

Directions

  1. Season chicken with salt, pepper, paprika and garlic powder.
  2. Place in roasting pan lined with foil, cover with foil and bake for approximately 1 hour at 350 degrees (F).
  3. While chicken is cooking, prepare the macaroni according to package directions. Drain, and toss with oil to keep from sticking.
  4. Remove chicken from roasting pan and remove skin and bones.
  5. Add the macaroni to roasting pan and combine with pan drippings.
  6. Stir in tomato sauce, chicken broth, allspice and cumin.
  7. Return chicken to pan and gently combine.
  8. Reduce oven temperature to 300 degrees (F) and bake, uncovered, an additional 45 minutes or until crispy.
