Prep time does not include refrigeration overnight.

Ingredients
6 Yukon Gold potatoes, large
1 cup mayonnaise
Juice of one lemon
1/8 cup vinegar
1 teaspoon of beet horseradish, heaping
1 teaspoon of Dijon mustard
1 cup baby dills with garlic, chopped
1/2 cup Italian parsley, coarsely chopped
1/4 cup celery leaves, coarsely chopped
1/2 tsp coarse salt
Pepper to taste
1 tsp kosher liquid smoke (Wright's is a kosher brand)
2 cloves garlic, crushed to a paste.
2 scallions, chopped fine.
Directions
- Gently boil the potatoes until they are just done, and when cool cut into 3/4 inch pieces.
- Mix all the other ingredients (not the potatoes), and refrigerate overnight in a glass container.
- Combine all ingredients and serve.
