Nice treat for Rosh Hashanah. Takes some time but well worth the effort.

Ingredients
8 eggs
1 jar plum preserves
4 medium apples, peeled and sliced thin
1/2 cup sugar
1/2 cup oil plus 2/3 cup for frying
2 pounds flour
2 teaspoons baking powder
2 teaspoons salt
Cinnamon-sugar, to taste
Pinch of pepper
Directions
- Mix the dry ingredients in a food processor, then slowly add the eggs and oil. Dough should be soft.
- Kneading dough by hand for a few minutes, then extend it with a rolling pin into a large circle about 18 inches in diameter.
- Spread plum preserve onto dough circle, then gently place apple slices over the preserves. Sprinkle with cinnamon-sugar, and a little bit of pepper.
- Roll the strudel very carefully, making a tight roll. Seal the edges with water.
- Heat 2/3 cup oil in a large oven safe pot and gently place the roll in the oil rolling it (to make it fit in the pot).
- Cover the strudel with boiling water (yes, water), then cover the pot with foil, and bake in the oven for 2 hours at 400 degrees (F).
- After 2 hours, remove foil and brown the top.
- To serve, remove strudel and slice it like a cake.
