If you don’t like pineapple, substitute sweet potatoes and increase the sugar (to keep it sweet).

Ingredients
2 lbs. carrots
1/2 cup pineapple, crushed
3/4 cup water sugar syrup
Directions
- Peel and slice carrots.
- Cook in slightly salted water for about 20 minutes, or until almost done.
- Add pineapple to carrots and continue cooking for an additional 15 minutes until soft.
- Add sugar syrup to taste and serve.
