Shishlik is a Bukharan dish prepared by grilling meat on an open flame.

Ingredients
1 lb. tender meat (beef or lamb), cut in 1 inch cubes
salt and pepper
1 clove garlic, crushed
1 tbs. oil
Directions
- Marinate meat in garlic and oil mixture for 1/2 hour.
- Remove and put meat on skewers.
- Season with salt and pepper to taste.
- Place over charcoal or in broiler until nicely grilled.
