Ingredients
¾ cup white sesame seeds
¼ cup shelled peanuts
1 cup jaggery (molasses)
2 tablespoons margarine or butter
Directions
- Roast sesame seeds on a non-stick pan over medium heat, stirring until they turn yellow. Remove to a plate and leave to cool.
- Roast shelled peanuts slightly. Let cool then grind coarsely.
- In a deep non-stick pot, add butter or margarine and melt over medium heat.
- Add jaggery (molasses) and let it melt, stirring constantly until the mixture starts bubbling.
- Turn heat to low and add roasted sesame and coarsely ground peanuts. Mix thoroughly with a wooden spoon and turn off the heat.
- Pour the mixture on a large greased dish and spread it evenly. You may have to pat it with your palm after wetting it with cold water.
- When the dish is almost cold, cut it into diamond shaped pieces (vadiya).
