Ethiopian Jews favored the same traditional spices as most Ethiopians, including Berbere. For a fuller flavor, grind the spices yourself.

2 tsp. cumin, ground
1 tsp. cardamom, ground
1/2 tsp. allspice, ground
1 tsp. fenugreek seed, ground
1 tsp. coriander, ground
8 whole cloves, ground
1 tsp. black peppercorns, ground
5 tsp. red pepper flakes
1/2 tsp. gingerroot
1 tsp. turmeric
1 tsp. salt
3 tsp. sweet or hot paprika
1/2 tsp. cinnamon


  1. Mix all ingredients.
  2. Place in a tightly covered container and refrigerate.
