Pareve Noodle Kugel

This kugel is sweet enough for a breakfast treat with a cup of coffee but it goes well with roast chicken or brisket. It is the only noodle kugel my BIL will eat.

Ingredients

1 pound egg noodles
1 cup raisins
1/2 stick unsalted pareve margarine
melted
3 eggs
1 tuna-size can crushed pineapple in
juice -- drained
2/3 cup sugar
1/8 teaspoon vanilla
1/8 teaspoon nutmeg -- freshly grated
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup unsweetened applesauce
cooking spray

Directions

  1. Cook noodles according to package directions, minus 2 minutes. While noodles cook, soak raisins in melted margarine. Drain noodles and set aside
  2. In a large bowl, combine eggs, raisins and margarine, pineapple, applesauce, sugar, nutmeg, vanilla, salt and cinnamon. Add noodles and mix until well blended.
  3. Spray a baking pan with cooking spray. Pour mixture into pan and bake at 350 until top is lightly browned and a toothpick inserted in center comes out dry, about 1 hour.
