I think my favorite part of rice pudding is the cinnamon sprinkle on top!

Ingredients

1/4 cup medium white rice
1 qt. milk
1/3 cup sugar
1 tsp vanilla
cinnamon or nutmeg
1/2 cup water

Directions

  1. Add rice to boiling water and heat on low until rice is nearly cooked
  2. Scald milk in the top of a double boiler, then add the rice and sugar.
  3. Continue cook the mixture over simmering water for about 1 hour, ensuring that the water in the lower portion of the double boiler does not boil. Stir frequently. Mixture is done when it thickens.
  4. Add in the vanilla and chill.
  5. To serve, sprinkle the top lightly with either cinnamon or nutmeg, per your preference.
