Arroz (Rice)
Ave. Rating is 2 (1 ratings) Add Your Comments and Ratings

Posted by:

As kids we ate lots of rice, which we called Arroz. The word is Spanish but the recipe was whatever my mother made that day – she mixed in peas, or onions etc. We ate it with kofta (with tomato sauce) or lakhma sofrito and often paired it up with green beans – a favorite side was fassoulia arroz (rice and green beans). This recipe is typical of what she made.

Ingredients

1 cup long-grain white rice
6 cups cold water
4 tbs. vegetable oil (I favor olive oil but you want a light oil)
1/2 cup yellow onions, chopped
Salt and pepper, to taste

Directions

  1. Soak rice in 4 cups cold water for 10 minutes in a medium sauce pan.
  2. Saute onions in 3 tbs. oil over medium heat until soft.
  3. Boil 2 cups salted water, then add the rice (drained) and continue boiling uncovered for 5 minutes.
  4. Add onions and stir.
  5. Reduce heat to low then cook covered until water is absorbed, about 20 minutes.
