Moroccan Stew (with Couscous)

Ingredients

1 lb beef or lamb, cut into 1 inch cubes
3 tbl olive oil
1 large onion, chopped
1 tsp turmeric
1 tsp ginger
1 tsp salt
1/8 tsp saffron
1/8 tsp black pepper
1/4 tsp red pepper flakes (can be omitted)
1 cup chicken or vegetable broth
2 carrots, peeled and diced
1 medium potato, diced
1 green pepper, diced
2 tbl raisins
1 cup couscous

Directions

  1. Saute beef or lamb in olive oil
  2. Add onion and spices and saute until onion soft and slightly brown
  3. Add potato and broth and simmer for 30 minutes
  4. Add green pepper and carrot and cook an additional 10 minutes
  5. Add raisins during last 5 minutes of cooking
  6. Serve over couscous
