Eggplant Casserole (Armoronia)

My father calls this dish Armoronia though he can't recall the meaning. It's a dish that has alternating layers of eggplant and ground beef.

Ingredients

1 large eggplant, sliced lengthwise
1 lb. ground beef
2 tsp. garlic, minced
1/8 cup fresh parsley, chopped
1/2 tsp. cumin
pinch turmeric
1/2 large white onion, sliced
1/4 cup water
salt and pepper, to taste

Directions

  1. Mix ground beef with garlic and spices
  2. Place layer of eggplant in 13x9 inch baking dish
  3. Add layer of ground beef and a layer of onions. Top with layer of eggplants.
  4. Add a second layer of eggplant, beef/onion, eggplant if preferred.
  5. Pour water over top for added moisture.
  6. Bake covered for 90 minutes at 325 degrees (F).

Nice dish though make sure to salt it well.
