Beef Goulash with Couscous

I've replaced much of the margarine in this recipe with olive oil for a healthier version. Use a couscousierre if you have one, otherwise a soup pot with a steamer will do.

Ingredients
1/2 cup chickpeas
1/4 tsp. baking soda
1 large onion, chopped
2 scallions, chopped
3 tbl. oilive oil.
2 tbl. margarine (optional)
1 tbl. tomato paste
1 tsp. salt
1/4 tsp. black pepper
1 pinch cayenne
1 tsp. paprika
6 potatoes, peeled and diced
1 lb. beef, cubed for stew
1 lb. couscous
2 cups water
Directions
- Heat oil in the bottom of pot and saute onions and scallions.
- Add tomato paste, salt, pepper, cayenne, paprika, and a little water to the sauteed onions. Cook for five minutes.
- Add chickpeas, potatoes and meat to pot and add water, just to cover
- Mix couscous with a small amount of water (to make it stick so it won't fall through steamer). Add to steamer and and place over pot.
- When steam begins to rise from couscous add margarine (if using), then cover and cook 45 minutes.
- Add water to couscous if needed.
- Serve goulash over couscous.
