Ingredients

Dough
3 cups flour, sifted
1/4 tsp salt
1/4 tsp baking powder
2 eggs
3 tsp vegetable oil
2/3 cups warm water

Filling
2 large green apples, peeled, cored and sliced
2 tbl sugar
1 tsp cinnamon
1 cup seedless raisins
1/2 cup pecans, chopped
1/2 cup butter, melted
2 tsp cream
1/4 cup breadcrumbs

Directions

  1. Sift flour, salt, and baking powder into a bowl. Make a well in the center and add eggs, oil, and water to it. Mix together ingredients.
  2. Knead dough until elastic and smooth, about ten minutes. Divide into three sections and set aside, covered, to rest for 1 hour.
  3. Roll out dough on a lightly floured surface. Roll out thin.
  4. Using floured hands, stretch out dough until even thinner (nearly transparent) into a circle. Brush with vegetable oil.
  5. Brush dough with melted butter, then cover with sliced apples, sugar and cinnamon. Sprinkle raisins and pecans. Sprinkle with bread crumbs.
  6. Using 1/3 of the fruit, lay out in a line along the long edge of the dough.
  7. Starting with the fruited edge, roll the dough.
  8. Keep the seam side down and lay on a buttered cookie sheet. Brush with cream (to brown) and bake at 325 F for 35 minutes.
  9. Remove from sheet still warm and cut diagonal slices about 1 inch thick.
  10. Continue with remaining dough and filling.
