Moroccan Almond Macaroons

Ingredients

5 oz. confectioner's sugar, sifted
2 tsp. grated lemon rind
1 egg, beaten
1 tsp. vanilla extract
7 oz ground almonds
1/4 tsp. ground cinnamon

Directions

  1. In a large mixing bowl combine sugar and beaten egg. Beat until mixture is white.
  2. In a separate bowl combine the almonds, lemon rind, vanilla extract and cinnamon. Gradually mix into sugar and egg mixture to make a dough.
  3. Knead dough soft and workable, about 5 minutes. Cover leave to rest for 15 minutes.
  4. On a lightly floured surface, roll out dough to a long cylinder shape about 1-1/2 inches thick. Cut into small pieces (about 2 dozen) and roll each into a small round ball.
  5. With oiled hands, flatten each dough ball into circles about 2-1/2 inches diameter.
  6. Place dough circles on an oiled baking sheet, leaving room to spread. Sprinkle with confectioners sugar and bake at 350 degrees (F) for 20 minutes, or until golden.
  7. Cool on wire rack.
