Amaretto and Macaroon Dessert

Frozen dessert has nice flavor of almonds. Great for Passover but dessert is dairy. Prep time does not include overnight freezing.

Ingredients

3 eggs
5 egg yolks
1/2 cups sugar, very fine
1/3 cups kosher Amaretto liquor
1 cup crushed almond macaroons (see below)
2 cups heavy cream

Directions

  1. Toast macaroons in a low temperature oven until they harden. Crush and set aside.
  2. In a large bowl, beat the eggs (whole eggs and yolks) and sugar until mixture is thick and light in color.
  3. Add amaretto and most of the macaroon crumbs and continue mixing on low setting.
  4. Whip the heavy cream and fold into egg mixture.
  5. Pour into a freezer-safe souffle dish and sprinkle remaining macaroon crumbs on top.
  6. Freeze overnight and serve frozen, like ice cream!

These are so yummy. I dehydrated a big batch to put in baggeis as my neighbor holiday gifts this year. They really remind me of buttermints, which used to be my favorite candy back in my candy eating days. My husband loves them too. I hope some of them actually make it out the door
