Ingredients

Filling:
1 lb prunes. pitted
1/4 cup raisins
1/2 cup walnuts
juice of 1 lemon and rind
1/3 cup sugar

Dough:
6 eggs, beaten
1 cup sugar
2/3 cup vegetable oil
2 tsp vanilla
1 tsp baking powder
6 cups flour

Directions

  1. Soak pitted prunes in water for at least 3 hours.
  2. Grind prunes, raisins, lemon rind and walnuts in a food processor then add lemon juice and sugar. Set aside.
  3. To prepare the dough beat sugar, oil and vanilla into eggs.
  4. Gradually add flour and baking powder and continue mixing.
  5. Knead lightly until smooth and form a large ball.
  6. Using a lightly floured surface, form small balls and roll out into 4 inch. dough circles.
  7. Place a teaspoon of filling at the center of each dough circle and then pinch together 3 sides to form a triangular shape.
  8. Bake at 350 degrees (F) for 20 minutes. Cookies should be nicely browned.
