Apple Cake

This cake is so packed with flavor, you might want to skip dinner and go right for dessert.

Ingredients

2 1/4 cup flour
2 1/2 tsp baking powder
1 tsp cloves
1 tsp ginger
1 tsp baking soda
pinch of salt
3 cups. tart apples, peeled and finely diced
1/3 cup raisins
1/2 cup walnuts, chopped
3/4 cups butter
1 1/2 cup packed dark brown sugar
1 tsp vanilla extract
3 large eggs
1/2 cup buttermilk
1/2 cup applesauce

Syrup:
1/3 cup apple brandy (substitute cider)
2 tbs sugar
1 tsp lemon juice
zest of 1 lemon

Directions

  1. Combine the flour, baking powder, spices, baking soda and salt in a bowl.
  2. Separately, combine the apples, raisins and walnuts. Add 3 tablespoons of the flour mixture and toss to coat. Set aside.
  3. In a mixing bowl, combine and cream the butter, brown sugar and vanilla.
  4. Add eggs one at a time and continue mixing. Stir in buttermilk and applesauce.
  5. Slowly add the remaining flour mixture to the butter mixture, and continue beating until blended.
  6. Stir the fruit nut mixture then pour batter into the Bundt pan (12 cup) and smooth the top.
  7. Bake at 350 degrees (F) for one hour. Let cake cool for 1 hour before removing from pan.
  8. Prepare the syrup: Combine syrup ingredients in a saucepan and heat to simmer until sugar dissolves. Remove from heat and set aside to cool for 15 minutes.
  9. Place the cake on a serving platter. Gently prick holes all over with a wooden skewer to better absorb the syrup.
  10. Strain the syrup to remove the lemon zest. Brush the cake with the syrup until it has been absorbed.
  11. Sprinkle some confectioner’s sugar and enjoy!
