Travados (Nut Cookies)

These cookies were popular among the Sephardic Jews of Greece and Turkey and were often served during holidays Purim and Rosh Hashana. Use walnuts in place of almonds if you prefer.

Ingredients

For the dough:
1 cup vegetable oil
1 tbs. baking soda
1/4 cup sugar
3 cups flour
1/2 cup white wine
1/4 tbs. cinnamon

For the filling:
1 lb almonds, finely ground
1/4 cup honey
1/4 cup water
1 tbs. cinnamon
1/2 tbs. cloves
Pinch of salt

For the syrup:
1/2 cup sugar
1 cup honey
1 tbs. lemon juice
1/2 cup water

For the topping:
Sesame seeds, toasted

Directions

  1. Mix the dough ingredients together until soft and smooth.
  2. Roll about 4 dozen walnut size balls, then flatten each into a circle.
  3. Prepare the filling by mixing nuts, honey, water, cinnamon and cloves.
  4. Fill each dough circle with 1 tablespoon of filling, then fold over and press the edges together.
  5. Bake on a floured baking sheet at 350 degrees (F) for about 25 minutes (until golden brown).
  6. While the travados are baking, prepare the syrup by combining the ingredients and heating to a temperature of 225 degrees (F) (the mix should be sticky).
  7. Coat the travados in the syrup then sprinkle with toasted sesame seeds.
