This cookie was popular among the Sephardic Jews that made their way to Greece (hence the name). Cook time does not include the option crisping time.

Ingredients
4 eggs, extra large
1/2 cup oil
3/4 cup sugar
2 tbs. vanilla
1 tbs. baking powder
3 1/2 cups flour
1 egg, lightly beaten for egg wash
Sesame seeds
Directions
- Mix oil, eggs and sugar in a blender
- Add vanilla, baking powder and flour.
- Make the dough into 1 oz balls, then roll out to 7 inch long ‘ropes’.
- Mark each rope with 7 small cuts evenly divided (do not cut through all the way) then bring the ends together making a circle.
- Lghtly brush each biscocho with an egg wash then sprinkle with sesame seeds. Place each biscocho on a flour dusted cookie sheet and bake for 10 minutes at 350 degrees (F) on lower rack then an additional 6 minutes on upper rack.
- For extra crisp cookies, stack on end in cookie pan and dry in oven for 2 hours at lowest setting
- Let cool then store in an airtight container.
