Biscochos de Huevo (Egg Cookies)

This cookie was popular among the Sephardic Jews that made their way to Greece (hence the name). Cook time does not include the option crisping time.

Ingredients

4 eggs, extra large
1/2 cup oil
3/4 cup sugar
2 tbs. vanilla
1 tbs. baking powder
3 1/2 cups flour
1 egg, lightly beaten for egg wash
Sesame seeds

Directions

  1. Mix oil, eggs and sugar in a blender
  2. Add vanilla, baking powder and flour.
  3. Make the dough into 1 oz balls, then roll out to 7 inch long ‘ropes’.
  4. Mark each rope with 7 small cuts evenly divided (do not cut through all the way) then bring the ends together making a circle.
  5. Lghtly brush each biscocho with an egg wash then sprinkle with sesame seeds. Place each biscocho on a flour dusted cookie sheet and bake for 10 minutes at 350 degrees (F) on lower rack then an additional 6 minutes on upper rack.
  6. For extra crisp cookies, stack on end in cookie pan and dry in oven for 2 hours at lowest setting
  7. Let cool then store in an airtight container.
