Sesame Honey Cookies

This Greek dessert was popular among the Jews of Rhodes.

Ingredients

2 cups sesame seeds
3/4 cup almonds
2 tbs. flour
1/2 cup honey
1/2 cup sugar
1/2 cup water

Directions

  1. Mix the flour with the sesame seeds and toast a little at a time in a dry non-stick skillet until lightly colored. This will easily burn so keep stirring and keep a close watch on it.
  2. Blanch the almonds, then cut into slivers and toast.
  3. To make the syrup, mix the honey, sugar and water and bring to a boil. Leave to boil until temperature reaches 240 degrees (F) with a thermometer.
  4. Add the sesame mixture and almonds. Stir and remove from heat immediately.
  5. Place the mixture onto a moistened work surface and allow to cool until you can handle.
  6. Divide into 4 equal sections and with wet hands (to avoid sticking), roll the pieces into ropes about 1 inch thick.
  7. Allow the ropes to set, turning occasionally.
  8. Cut into 1 1/2-inch-long diagonal pieces and serve!
