Baked Halibut with Cabbage and Parsley

This halibut entree could be the entire meal, with the cabbage and parsley as side dishes. Cook times are for frozen halibut steaks. Halve the baking times if using thawed steaks, but monitor.

Ingredients

6 halibut steaks
3 cups shredded cabbage
Juice of 1 lemon, divided
1 bunch fresh parsley
1/2 cup bread crumbs
3 garlic cloves, crushed
1/8 tsp. granulated garlic (not powder)
5 tablespoons olive oil, divided
1/4 tsp. salt
Pepper, to taste

Directions

  1. Combine cabbage in a bowl with half the lemon juice, 1/8 teaspoon salt, 1/8 granulated garlic, 2 tablespoons of oil and pepper, to taste. Mix well.
  2. Place in a layer at the bottom of a large baking dish (13 x 9 inches should be large enough)
  3. Arrange the halibut steaks over the cabbage and set aside.
  4. Prepare the washed parsley be removing the stalks and add to food processor. Pulse 2 or 3 times to chop and add crushed garlic, breadcrumbs, remaining oil, 1/8 teaspoon salt, and pepper to taste. Pulse again to combine well.
  5. Spread parsley over the halibut steaks.
  6. Bake, covered with foil, at 375 F for 20 minutes.
  7. Uncover and bake an additional 20 minutes, or until done (flaky)
