1 large onion, chopped
2 cups leeks, chopped
5 cloves garlic, chopped
3 stalks celery, sliced
3 large carrots, sliced
1 large parsnip, chopped
6 peppercorns
1 tsp sugar
8 cups vegetable stock
1/3 cup vermouth
1/3 cup dry sherry
1 bullion cube (use parve chicken flavored)
1 tsp. salt
1/4 cup fresh parsley
2 bay leaves
2 tbs. olive oil
Pinch each of dried basil, oregano and thyme


  1. Sauté onions, garlic and leeks in a large pot with a little olive oil for 5-7 minutes. Add remaining ingredients and vegetable stock and simmer for 30 minutes.
