Apple Harvest Rice

This dish of rice with cooked vegetables and fruit is perfect for Rosh Hashana or Sukkot.

Ingredients

1 cup carrots, thinly sliced
2 tbl margarine
1 1/4 cups water
3/4 cups apple juice
2 tablespoons lemon juice
2 tablespoons brown sugar
1 teaspoon Salt
1 cup rice, uncooked
1/2 teaspoons ground cinnamon
1/2 cups raisins
1/2 cups sliced green onions
2 cups apples, cored, sliced and unpeeled
1 tablespoon toasted sesame seeds

Directions

  1. Cook carrots in margarine until tender-crisp, about 5 minutes.
  2. Add water, apple juice, lemon juice, brown sugar, salt, rice, cinnamon and raisins and bring to a boil.
  3. Reduce heat, cover and simmer until rice is tender and liquid is absorbed, about 15 minutes.
  4. Gently stir in green onions and apples, heat thoroughly.
  5. Turn into a serving dish and top with sesame seeds.
