Flank Steak wth Moroccan Spices

Though it has a Moroccan flare, this recipe is an American preparation. Flavorful and satisfying.

1 medium onion, chopped
1/2 cup olive oil
5 tbl. lemon juice
2 tbl. soy sauce
2 tbl. fresh parsley, chopped
5 1/2 tbl. fresh ginger, chopped
1 tbl. ground cumin
1 tbl. chili powder
2 tsp. Sherry
1 tsp. turmeric
1 tsp. dried oregano
1 tsp. coarsely ground pepper
2 garlic cloves, large
4 lb Flank steak
Fresh cilantro, for garnish


  1. Prepare the marinade in a large bowl, mixing all the ingredients except the Flank steak and cilantro.
  2. Marinade the steaks overnight, covered and refrigerated.
  3. Grill steaks to your preference, reserving marinade.
  4. Heat marinade in saucepan.
  5. Cut grilled steaks diagonally into thin slices.
  6. Add marinade and garnish with cilantro before serving.
