My Best Vegetable Kugel

Our family has had this recipe for a long time, a favorite from a forgotten cookbook; For Passover or any time of the year! I also bake this in individual muffin tins and this always gets recipe requests!

Ingredients

12 Tbs butter or margarine
1/2 cup green bell pepper chopped
2 cups onions chopped
1 cup diced celery
3 cups grated carrots
20 oz raw spinach, washed drained, tough stems removed
6 large beaten eggs
3 tsp salt
1/4 tsp pepper
1 1/2 cup matzoh meal

Directions

  1. In a very large pot or skillet, saute all vegetables in margarine or butter, stirring now and then until vegetables become tender.
  2. Fold in beaten eggs, salt, pepper, matzoh meal.
  3. Spoon into a well greased 9 x 13 pan.
  4. Bake in a 350F oven about 45 minutes or firm.
  5. Cool 10 minutes in pan and cut into squares to serve
  6. Optional: add some chopped garlic
