Ingredients

2 cups chicken, cut into small pieces
4 cups chicken broth
1 onion, diced
4 celery stalks, diced
1/4 tsp. salt
1/2 tsp. pepper
1 tbl. crushed mint
1/4 cup oil
2 cups cooked rice

Directions

  1. In a soup pot, saute the onion, chicken and celery in oil.
  2. Add chicken broth, mint and pepper and boil for 1/2 hour.
  3. Add cooked rice and serve hot.
