Passover Spinach Fritada

Ingredients

2 bunches fresh spinach, washed and cut
3 matzos
6-8 eggs, beaten
2 tbl olive oil
salt and pepper to taste

Directions

  1. Sautee spinach in two tablespoons of olive oil
  2. Soak matzo until soft, squeeze out excess water
  3. Beat eggs and mix in matza, sauteed spinach, salt and pepper
  4. Pour in a 9 x 13 inch greased baking dish
  5. Bake at 400 degrees (F) for 30 minutes until firm to touch
